Two brothers started a sashimi restaurant called Katto.
They noticed that groups of people would walk in, look at the menu and then walk out.
Turns out that some people in the group didn’t eat sashimi, and so, in order to cater to everyone’s tastes the group would leave.
The brothers were torn about whether they should do something about it or stick to their vision of a sashimi only restaurant.
Eventually, they decided to run an experiment. They would add yakitori chicken to their menu.
Now the groups would walk in… and stay.
One change can change everything.
At the very least it’s an opportunity to learn and to provide the foundation for more changes down the road.
